INGREDIENTS

  • 2 Avocados, cut in half

  • 1/2 Red Pepper, chopped

  • 1/2 Cucumber, chopped

  • 1 Tomato, chopped

  • 150gr Vegan Cheese (I used Vegan Feta)

  • Handful of Pomegranate Seeds

  • Handful of Fresh Mint

  • Handful of Fresh Coriander

  • Juice of 1 Lemon/Lime

  • Salt

  • Pepper

INSTRUCTIONS

  1. Mix red pepper, cucumber, tomato, vegan cheese, pomegranate seeds, mint, coriander and lemon juice in small bowl.

  2. Dish the mixture into each avocado halves and season with salt and pepper.
