Basil Pesto
INGREDIENTS
2 Cups Fresh Basil (large stems removed)
3 Tablespoons Pine Nuts or Walnuts (if nut free, try sunflower seeds)
3 Cloves Garlic (peeled)
2 Tablespoons Lemon Juice
3-4 Tablespoons Nutritional Yeast
1/2 Teaspoon Sea Salt (plus more to tasteO
2-3 Tablespoon Extra Virgin Olive Oil
3-6 Tablespoon Water (plus more as needed)
INSTRUCTIONS
Place basil, nuts, garlic, lemon juice, nutritional yeast and sea salt and blend on high in food processor until a loose paste forms.
Add olive oil in a little bit at a time (streaming in while the machine is on if possible) and scrape down sides as needed. Then add 1 Tablespoon water at a time until the desired consistency is reached - a thick, but pourable sauce.
