Broccoli Soup

INGREDIENTS

  • 75gr Coconut Oil

  • 1 Onion, finely chopped

  • 2 Heads Broccoli, chopped coarsely, including stems)

  • 1 Litre Organic Vegetable stock

  • 1/4 Teaspoon Cayenne Pepper/Chilli Flakes

  • Himalayan Salt and Ground Pepper

  • Olive Oil (to serve)

  • Pumpkin Seeds (to serve)

  • Coconut Cream/Yoghurt (to serve)

INSTRUCTIONS

  1. Melt Coconut oil in a large saucepan and lightly fry the onion, cayenne pepper and 1 teaspoon salt.

  2. Once the onion is translucent (after about 10 minutes), add the broccoli and the stock, and bring to the boil. Cover and simmer for about 20 minutes.

  3. Once the soup is ready, use a stick blender to finely puree the mixture. Add extra salt and pepper to taste.

  4. Serve drizzled with the olive oil and coconut cream/yoghurt. Top with pumpkin seeds.
