Quinoa & Pine Nut Salad

INGREDIENTS

FOR THE SALAD

  • 200gr Quinoa

  • Salt

  • 1 Avocado, chopped

  • 40gr Pine Nuts

  • 40gr Pumpkin Seeds

  • Two Handfuls of Baby Spinach Leaves, shredded

  • Sesame Seeds for Garnish

FOR THE DRESSING

  • Finely Grated Zest and Juice of 1 Lemon

  • 1 Teaspoon Ground Cumin

  • 2 Tablespoons Apple Cider Vinegar

  • 4 Tablespoons Olive Oil

  • Salt

INSTRUCTIONS

  1. Place the quinoa in a saucepan with a a generous sprinkling of salt and 500ml of boiling water. Bring to the boil, then let it simmer for 10-15 minutes, or until the water has been absorbed and the quinoa is soft and fluffy. Place in a bowl and leave it to cool.

  2. Mix all the dressing ingredients together.

  3. Mixed the cooled quinoa with the baby spinach, avocado, pumpkin seeds and pine nuts. Then add the dressing and mix it all together.

  4. Sprinkle the sesame seeds on top. Serve.
