Raspberry Parfait

INGREDIENTS

FOR THE PARFAIT

  • 1/2 Cup Frozen Raspberries

  • 3/4 Cup Almond Milk

  • 1/3 Cup Quinoa Flakes

  • 2 Tablespoons Chia Seeds

  • 1 Tablespoon Maple Syrup

  • 1-2 Teaspoons Lemon zest

FOR THE COULIS

  • 2 Cups Berries, fresh or frozen

  • 1-2 Tablespoons Maple Syrup

INSTRUCTIONS

  1. Combine the ingredients for the coulis together in a saucepan. Heat over a medium heat until he berries are soft, mushy and surrounded in their own delicious liquid.

  2. Strain the mixture into a bowl through a fine mesh sieve, pulping the berries through with the back of your spoon until you are left with a small amount of seeds in the sieve. Discard the seeds and pour the sauce into your chosen bottle. Store in fridge while preparing the parfait.

  3. Stir together berries and milk in small glass bowl. Let sit for 2-3 minutes and stir again until milk turns pink. Add in remaining ingredients and stir to combine. Seal the container and place in the fridge for at least 2 hours up to overnight. When ready to serve scoop onto coulis mixture and top with fresh berries, almond butter, a sprinkle of cinnamon and designated coconut if desired.
