Raw Chocolate Cake

INGREDIENTS

FOR THE CRUST

  • 1 Cup Almonds

  • ½ Cup Dates

  • ⅓ Cup Cacao Powder

  • 1 Teaspoon Vanilla Extract

  • 1 Tablespoon Maple Syrup

  • 1-2 Teaspoon of Water

FOR THE FILLING

  • 3 Large Ripe Avocados

  • 6 Tablespoon Maple Syrup

  • ½ Cup Cacao Powder

  • Pinch of Sea Salt

INSTRUCTIONS

  • Firstly make the crust by placing the almonds, dates, cacao powder, maple syrup in a food processor and blend until you have a crumbly mixture.

  • Slowly add in the water if needed to make a "dough".

  • Press your crust mixture into a prepared tin. (I used a 15cm tin) Place the tin in the fridge until needed.

  • To make the chocolate mousse layer, peel the avocados and place in a food processor as well as the maple syrup, cacao powder and salt.

  • Blend for 5-10 minutes until smooth.

  • Remove your base from the fridge and smooth the avocado layer over it.

  • Place in the fridge for 15-20 minutes to allow the cake to set.

  • Remove from the fridge and serve with sprinkle of cacao on top and fresh berries.
