Raw Chocolate Cake
INGREDIENTS
FOR THE CRUST
1 Cup Almonds
½ Cup Dates
⅓ Cup Cacao Powder
1 Teaspoon Vanilla Extract
1 Tablespoon Maple Syrup
1-2 Teaspoon of Water
FOR THE FILLING
3 Large Ripe Avocados
6 Tablespoon Maple Syrup
½ Cup Cacao Powder
Pinch of Sea Salt
INSTRUCTIONS
Firstly make the crust by placing the almonds, dates, cacao powder, maple syrup in a food processor and blend until you have a crumbly mixture.
Slowly add in the water if needed to make a "dough".
Press your crust mixture into a prepared tin. (I used a 15cm tin) Place the tin in the fridge until needed.
To make the chocolate mousse layer, peel the avocados and place in a food processor as well as the maple syrup, cacao powder and salt.
Blend for 5-10 minutes until smooth.
Remove your base from the fridge and smooth the avocado layer over it.
Place in the fridge for 15-20 minutes to allow the cake to set.
Remove from the fridge and serve with sprinkle of cacao on top and fresh berries.
