Salted Caramel & Cashew Popcorn
INGREDIENTS
1 Cup Un-popped popcorn
2 Tablespoons of Coconut Oil for popping pop corn
2 Cups Coconut Sugar
2 Tablespoons Water
1 Cup coconut Butter
1 Teaspoon Himalayan Salt
1/2 Teaspoon Baking Soda
1 Teaspoon Vanilla
1 or 2 Handfuls of Cashew Nuts
INSTRUCTIONS
Pop the corn kernels as normal and remove the unpopped kernels.
In small sauce pan melt together water, coconut butter and coconut sugar on low heat until sugar is dissolved. Stirring occasionally to avoid the sugar to burn.
Leave to simmer for 2 minutes once sugar has dissolved.
Remove small saucepan from heat and stir in remaining ingredients.
Pour over popcorn and stir to evenly coat the popcorn. Cool in refrigerator in airtight container. You can break or cut into pieces for kids (or yourself) to enjoy!
