Yogi Bowl
INGREDIENTS
FOR THE SALAD BOWL
1 Cup Cooked Quinoa
1 Avocado, Pitted and Sliced
2 Radishes, Sliced
1 Tin Chickpeas, Drained and Rinsed
4 Cherry Tomatoas, Halved
1 Cucumber, Sliced
Handful of Lettuce Leaves
2 Tablespoons Chia Seeds
1 Lemon, Quartered
FOR THE DRESSING
1/4 Cup Extra Pressed Virgin Olive Oil
1/4 Cup Dijon Mustard
2 Tablespoons Apple Cider Vinegar
2 Tablespoons Maple Syrup
Salt and Pepper to taste
INSTRUCTIONS
To make the dressing, combine all the ingredients in a small bowl and whisk until creamy.
Combine all the other ingredients in a two bowls - placing the lettuce at the bottom of the bowls. Drizzle over the dressing. Serve.
