INGREDIENTS

FOR THE SALAD BOWL

  • 1 Cup Cooked Quinoa

  • 1 Avocado, Pitted and Sliced

  • 2 Radishes, Sliced

  • 1 Tin Chickpeas, Drained and Rinsed

  • 4 Cherry Tomatoas, Halved

  • 1 Cucumber, Sliced

  • Handful of Lettuce Leaves

  • 2 Tablespoons Chia Seeds

  • 1 Lemon, Quartered

FOR THE DRESSING

  • 1/4 Cup Extra Pressed Virgin Olive Oil

  • 1/4 Cup Dijon Mustard

  • 2 Tablespoons Apple Cider Vinegar

  • 2 Tablespoons Maple Syrup

  • Salt and Pepper to taste

INSTRUCTIONS

  1. To make the dressing, combine all the ingredients in a small bowl and whisk until creamy.

  2. Combine all the other ingredients in a two bowls - placing the lettuce at the bottom of the bowls. Drizzle over the dressing. Serve.
