Easy Hummus Recipe
INGREDIENTS
1 x 410gr Can Chickpeas, drained and rinsed
2 Garlic Cloves, peeled
40ml Tahini
Juice of 2 lemons
Sea Salt
TO SERVE
20ml Extra Virgin Olive Oil
Pinch of Smoked Paprika
Coriander, stems removed and leaves roughly chopped
INSTRUCTIONS
Place the chickpeas in a saucepan and cover with 500ml water.
Bring to boil and simmer for 30 minutes
Reserve the cooking liquid. Drain the chickpeas and rinse. Rub the skin off each chickpea and rinse again (I know it seems like a lot of trouble, but it brings out the smokiness of the chickpea in the hummus)
Blend the chickpeas with garlic cloves, tahini, lemon juice and sea salt in a food processor until a smooth paste is formed. Add a tablespoon or so of the reserved cooking liquid and blend until you achieve a thick, creamy consistency.
Transfer the hummus to a shallow bowl and make a groove in the top using the back of a spoon. Drizzle extra virgin olive oil, smoked paprika and coriander on the top.
