Kiwi Blueberry Chia Pudding

INGREDIENTS

  • 1/4 Cup Chia Seeds

  • 1 Cup Unsweetened Coconut Milk

  • 1 Tablespoon Maple Syrup

  • 1 Teaspoon Vanilla Bean Paste from pod (or 1 Teaspoon vanilla extract)

  • 3 Kiwi, peeled and 1 Kiwi, peeled and sliced

  • 1 Cup Fresh Blueberries + extra for garnish

  • Handful of Fresh Blackberries

  • Toasted Coconut Flakes

  • Coconut Cream (optional)

INSTRUCTIONS

  1. Combine chia seeds, coconut milk, maple syrup and vanilla in a glass container and leave overnight in fridge

  2. Remove chia pudding from he fridge and give the mixture a good stir, making sure the chia seeds have absorbed most of the liquid and created a thin gel-like consistency.

  3. Taste and add more maple syrup, if needed.

  4. Place three kiwi’s and one cup blueberries in a blender and process until pureed.

  5. Create your breakfast in two glass containers by adding sliced kiwi around the bottom of the glass, a layer of chia pudding, a layer of kiwi/berry puree and another layer of chia pudding.

  6. Top each meal with fresh berries, sliced kiwi and a few flakes of toasted coconut.

  7. I added a dollop of coconut cream in for extra creaminess above each layer of chia seeds.
