Orange & Coconut Loaf

INGREDIENTS

DRY INGREDIENTS

  • 160 Gram Rice Flour

  • 80 Gram Cornflour

  • 60 Gram Ground Almonds

  • 1 Teaspoon Baking Powder

  • 1/2 Teaspoon Xantham Gum

  • 1/2 Teaspoon Salt

WET INGREDIENTS

  • 1 Tablespoon Flaxseeds (Ground)

  • 3 Drops of Wild Orange @DoTerra Essential oil

  • 3 Drops of Cinnamon @DoTerra Essential oil

  • Juice of 3 Oranges

  • 1 Teaspoon Orange Zest

  • 100 Gram Coconut Cream

  • 1 Banana

INSTRUCTIONS

  1. Place the oven rack in the middle of the oven and preheat t0 180C. Grease your pan. Cover the ground flaxseeds with 3 Tablespoons of water and leave on the side for 10 minutes.

  2. Cut 5 thin slices of oranges and position at the bottom of your pan.

  3. In a large bowl, stir together all the dry ingredients.

  4. Next (in a different bowl) place all the wet ingredients and combine thoroughly.

  5. Pour the wet ingredients into the dry ingredients and whisk until no lumps remain.

  6. Pour the batter into your pan over the sliced oranges and place in the oven for 40 minutes, or until golden brown. Enjoy with delicious coconut whipped cream on top if desired.
